Recipe: Vegan + Gluten Free Lavender Honey Ice Cream

This is our allergy friendly version of this recipe for vegans or those who can't eat dairy or gluten. Quite often someone at the family function will struggle with these allergies, and that person also would love a custom sweet treat on their birthday! The texture is perfect for popsicle molds and that is perfect for kids young and old.

Wow! Everyone needs lavender in their life, right? This recipe will help your holiday gathering go smoothly to say the least.

Prep time is 30 minutes + 60 minutes cook time = 90 minutes!

Ingredients:

  • 1 can (13.5 oz) whole coconut milk (found in Asian aisle of grocery stores)
  • 1 cup Almond Milk, or other dairy alternative (original or vanilla flavor)
  • 1/2 cup honey
  • 1/2 tsp xanthan gum (gluten-free thickener)
  • 1/4 tsp table salt
  • 2 tsp dried culinary lavender

Directions:

  1. Add the coconut milk, honey, and lavender to a medium saucepan set over medium heat. Stirring occasionally, bring the lavender cream mixture to steaming. Remove from heat and allow 15 minutes to cool.
  2. In a blender, add all ingredients and blend on high until thick and creamy, 1-2 min. Transfer mixture to an airtight container and chill 1+ hours.
  3. Place chilled mixture into an ice-cream maker and churn according to manufacturer’s instructions (might only need half the amount of suggested churn time, as it thickens pretty quickly.) Add lavender during last 5 minutes of churning.
  4. May serve immediately for a frozen custard-like texture that’s ultra creamy, smooth, and soft. You can also pour this into Popsicle molds and freeze. Otherwise, transfer ice cream to an airtight container and freeze 30-60 minutes for a firmer texture. If frozen much longer, it will be too hard and need thaw time at room temp before serving (actual thaw time depends on your room temp.)
