Jam Diaries: Lavender Rhuberry

All my jams have a story about what inspired me to create their flavors, which brought them to life.

I’m a big fan of Ina Garten, The Barefoot Contessa, and her cooking shows. I have been introduced to many culinary delights through her show. One of them was rhubarb. Being from the south, I haven’t had much exposure to rhubarb because it is mainly grown in cooler climates. Ina made a strawberry and rhubarb crisp, which started my intrigue into this plant. I had already been experimenting with lavender in some other recipes and decided to add it to this one. Wow! Was all we could say, and we found ourselves fighting for the last bite. The understated flavor of the lavender with sweetness of strawberry and the tartness of rhubarb was a game changer. Then I thought about how great that would be in a jam and Rhubery jam was born.

The taste of Rhubarb is surprising. If you are unfamiliar, imagine a tangy, sweet celery stick! Strange but very delicious, and when combined with lavender, there's nothing like it!
